It is September and summer is coming to an end.  Kids are back in school, and our thoughts turn towards the wonders of Fall and the Holidays just around the corner!  For some, it is a somber time to lament the passing of warm summer days basking in the sun and cooling down in the water.  For us, it marks the beginning of coffee season!  So many wonderful flavors this time of year and as the weather turns nippy, the desire for that old cup-of-joe companion gains more meaning!  To kick of the Fall, we are featuring our custom coffee blend Old Town Mexicano.  

 

Coffee of the month:  Old Town Mexicano

This tribute to Old Town San Diego is a classic Viennese Roast.  A blend of coffee roasted two different ways; Medium and Dark.   We prefer to use a coffee from Guatemala for this recipe.  We roast it to second crack for a medium profile.  Then we roast the same bean past second crack for a French roast.  The combination if perfect.  The medium profile provides some of the classic characteristics of a good Guatemalan coffee, cocoa, spice, and sweet.   The dark roasted profile brings out the syrupiness and slight smokiness of this great coffee.  Then we blend the two profiles 50/50.  The combination of the two different roasting styles produces a slightly sweet, bitter cocoa, rich, syrupy cup with a hint of smokiness to complete.  Me gusta!



Tea of the month:  CHAI LEAF TEA

The name “chai” is actually the Hindi word for “tea”, which was derived from “cha”, the Chinese word for “tea”. In this case, the Hindi term chai means a mix of spices steeped into a tea-like beverage. Recipes for chai vary across continents, cultures, towns and families. Our family recipe starts with an Organic Full Orange Pekoe (FOP) black tea from China.  We add the spices of cinnamon, cardamon, cloves, peppercorn and a subtle blend of rose hips to add a delicate, floral flavor that's slightly sweet with a distinct tart aftertaste.  This classic will warm the belly and invigorate the palate.  This tea makes the perfect base for a Chai Tea Latte, which takes us to the powder mix of the month.



Powder Mix of the month:  Classic Chai

A classic blend of spices and freeze-dried organic black tea.  You simply cannot go wrong with this choice whether you add this drink powder to hot water, hot/cold milk, hot/cold milk alternative, blend with ice and milk/milk alternative, coffee, or tea.  One scoop (2 tablespoons) per 12 oz. of liquid and you will have drink perfection!  This mix is also non-dairy!  Our 12 oz. recipe suggestion is:

  • 6 oz. hot steeped Chai Tea Leaf
  • 6 oz. hot milk/milk alternative
  • 1 scoop (2 tablespoons) Classic Chai powder
  • Top with whip cream
  • Garnish with cinnamon

If you are looking for a toddy, go ahead with a splash of vodka!  You are welcome 😊!
